Hello out there (echo, echo, echo) Just thought of our lonely little blog he other day, popped in for a visit and no one was home, no one had come over to visit, no one brought any tasty snacks. So I thought I would drop by and leave a little surprise for the next visitor...(Kinda like geocaching, huh Jas?!)
I really liked this recipe for dinner and I really LOVED this recipe as a leftover lunch the next day, so I thought of all the teachers and nurses (and the rogue dental hygienist) who take lunches to work and I thought you might like to try this sometime.
Asian Chicken Salad
6T Seasoned Rice Vinegar
1/4 Cup Canola Oil
2T Sesame Oil
2 cloves Garlic
2T ginger chopped
5T Soy
2t hot chili sauce (asian aisle at the store, like 2 bucks-look for it)
Blend all ingredients in blender until smooth, Pour 3T over 1 lb Chicken Breasts and marinade. Save the rest as the dressing. Actually, boil 3/4 lb. spaghetti and pour the rest of the dressing over the spaghetti while its hot, then forget all about those saucy noodles for at least an hour.
-Is your hour up?
OK, mix these veggies up with your noodles and then grill off your chicken and dice it up in the salad.
Handful Cilantro
2 Green Onions
1 Red Bell Pepper
1 C Shredded Carrot
1 C snow peas
1 can Mandarin Oranges, drained
1/2 c Cashews.
Eat, enjoy, then put in fridge and enjoy it better the next day when all those flavors are married!
